Tempeh sausage rolls

During lockdown I've missed a lunchtime stroll in the city centre with a coffee in my hand and something to eat in my bag at the park. I was therefore  so happy to come across this inspired sausage roll recipe by Branston (@bringoutthebranston- Instagram) that I decided to make my own version, using tempeh as the main ingredient. It was so good that I had to share!

Ingredients 

  1. A teaspoon of garlic
  2. A teaspoon of sage
  3. A dollop of Suma mushroom paste
  4. Half a diced onion
  5. 150 grams of tempeh - slice thinly or chopped in a food processor
  6. A handful of chopped cashews
  7. A handful of shredded cheese or more if you like (I used the vegan cheese, violife) 
  8. Two tablespoons of Branston small chunk pickle
  9. A roll of puff pastry

Steps

  1. Heat the oil in the pan. Add in the onions, garlic, sage, tempeh and the mushroom paste to the pan and sauté for 10-15 minutes to soften the onions and brown the tempeh. See picture 2 above
  2. Add the cheese and cashews. Mix thoroughly until the cheese melts. Set aside to cool
  3. Roll out the puff pastry, cut in half and spread on the Branston pickle
  4. Add the tempeh mixture
  5. Spread some oil or butter on the edges before sealing the pastry. I didn't have any butter so used Oatly Barista drink
  6. Crimp the edges with a fork
  7. Score the top with a knife
  8. Put in a fan oven on 200C for 25 minutes
  9. Done! It is quite a big portion and will serve for 4 people but I ate the lot . Yummy!
